Looking for a light, low-carb alternative to traditional kimbap? This Rice Paper Kimbap uses fresh vegetables and seasoned chicken breast—no sushi rice needed!
It's perfect for those on a diet or anyone wanting a healthy, satisfying meal.



🛒 Ingredients (Serves 1)

  • 1 sheet of roasted seaweed (gim)

  • 1 sheet of rice paper

  • 2 eggs (for egg crepe)

  • Cabbage, purple cabbage, carrot, cucumber

  • Pickled radish, imitation crab sticks

  • Seasoned chicken breast with basil and olive oil

  • Optional sauce:

    • Peanut Sauce: 1 tbsp natural peanut butter, 2 tbsp allulose, 1 tbsp whole grain mustard, 2 tbsp lemon juice, (optional: onion chips)

    • Onion sauce (or any preferred dipping sauce)



🥕 Preparing the Vegetables

  1. Thinly slice all the vegetables into bite-sized strips.

  2. Use just enough to comfortably roll one kimbap—don’t overfill.

  3. Tear the imitation crab into thin pieces.

  4. Do not season the vegetables—use them fresh and raw.

  5. Beat the eggs and make a thin egg crepe (jidan). No need to slice it!

TIP: You can use any vegetables you like. Feel free to get creative with what's in your fridge!

🍙 How to Roll Rice Paper Kimbap

  1. Place one sheet of seaweed (gim) on a clean surface, then place one sheet of rice paper on top of it.

  2. On the rice paper, lay the egg crepe like a blanket in the center.

  3. Add sliced vegetables and seasoned chicken on top of the egg.

  4. Be sure not to overfill, so the roll can wrap neatly.

Pro Tip:
Placing the rice paper between the seaweed and the warm egg crepe helps everything stick together without needing water.
The rice paper softens slightly from the egg's warmth, making it easier to roll.
This also prevents the seaweed from getting soggy and helps the roll hold its shape beautifully.

  1. Wrap the roll once, then press gently to hold it together.

  2. With one hand holding the roll, moisten the edge of the seaweed with water using the other hand. Finish rolling tightly.

  3. Place the seam side down and lightly brush the outside with sesame oil for a glossy finish.

✅ Do NOT soak the rice paper or seaweed in water!
✅ Adjust the amount of veggies so the roll wraps cleanly in one go.

Place the egg custard on rice paper while it is hot.

Place the vegetables on top of the egg custard.

After wrapping the vegetables tightly, roll up the rest and moisten the edges with water so that it sticks well.

These kimbap rolls taste great on their own, but if you want a flavor kick, dip them in your favorite sauce.

🥄 Easy Peanut Sauce Recipe:

  • 1 tbsp natural peanut butter

  • 2 tbsp allulose

  • 1 tbsp whole grain mustard

  • 2 tbsp lemon juice

  • (Optional) A pinch of onion chips for added depth

Slice the kimbap as you normally would, serve it with your sauce of choice, and enjoy!
